Eat The Blog: Strawberry and Sparkling Grape Sorbet

I still had a couple bottles of non-alcoholic white grape juice left from New Year's Eve, and this made good use of one bottle.

You Will Need:

1 quart strawberries, well-mashed
1/2 cup granulated sugar
1 cup sparkling non-alcoholic grape juice

Mash the strawberries and force them through a sieve to remove seeds. This is a pain in the behind, but worth it. Whisk in the sugar, then whisk in the sparkling juice. Keep whisking until the sugar dissolves (it goes pretty quickly with the carbonation). Place in a freezer tray and freeze 30 minutes. Scrape with a fork and mash. Return to fridge and repeat every 30 minutes until form. Scrape into a container and freeze until firm before serving. Makes about 1 1/2 pints.

Good Life of Design: Something That Helps Me Eat Healthier & It's ...

We all know eating more fruits and vegetables is good for us, but how many of us eat as many as we should in one day?

Eating healthy  is not as easy for some of us as it is for others. I think we all have to find our own methods that will work to promote better health.

………What I Do……….

Being such a visual person I have found something that has worked well for me.

Fresh Produce 001 (800x464)

I get fresh organic produce delivered to my home. It is all locally grown and fresh. I have found new vegetables that I normally do not eat. It is just a treat and a healthy treat at that to get it delivered.

Fresh Produce 002 (800x545)

Once I get my box I plan that nights dinner around the fresh veggies in the box in order to use them at their freshest.

Fresh Produce 005 (800x599)

Make It Visually Appealing

(sorry I could not resist, I would do this for a party, but not on an every day basis!)

But I do this on an everyday basis…….

Boys pictures and healthy fruit display for blog 004 (1024x768) (800x600)

I like to keep bowls out on my tray on the kitchen counter of fresh fruit and veggies. This helps me  throughout the day, and I will be reminded to grab some fruit, or veggies for my snack.

fresh produce from fruit stand 001 (600x800)

This is what works for me. I know it won’t for everyone, but if you are like me you are always looking for ways to improve your quality of life.

What You Might Find On My Kitchen Counter:

  • Blackberries
  • Blueberries
  • Strawberries
  • Grapes
  • Orange slices
  • Small grape tomatoes
  • Assorted Heirloom tomatoes
  • Celery placed in ice water
  • Almonds
  • Walnuts
I try to display them in a pleasing way to make them more appealing, and decorative. Trust me this is an easy thing to do , or I would not be doing it!

I like to have this out when I have overnight guest. This allows them to feel like they can always grab a snack.

What do You All Do?

Do you have any creative ways to help yourself in eating better that is visually appealing? Please share any tid-bits in the comments. It is always so helpful to get feedback from YOU all!!

Getting creative with food.

Honey Walnut Power Salad — Pinch of Yum

Pinit

Almonds and a Diet Coke. That was my sad lunch today.

As someone who feels that lunch is one of the highlights of the day (sandwiched between chocolate snacks and bedtime), having a bad lunch is more than just a little depressing.

To all you out there who can just “forget” to eat lunch, I can’t sympathize. To forget to eat lunch would be like forgetting about that big pile of miscellaneous garage sale stuff sitting in our living room. AS IF.

Honey Walnut Salad

One of the most glamorous things about a teacher’s job is eating in a teacher’s lounge. Imagine a rainbow of educational goodies on every wall, the sweet music of lunchroom chaos every time the door opens, and the overabundance of smallish plastic sporks, which, by the way, are really good at making you look like you don’t know how to eat.

This is why lunch – the actual lunch – better be seriously good.

When I saw Sara’s yummy salad a few weeks ago, I knew it was the ultimate epitome of lunch. So I made it, and made it again, and made it yet again using a tiny bit more grains for my big lunch appetite.  I love it. Love love love.

It’s portable, it’s healthy, it’s pretty, and it’s loaded with texture and flavor. The bulgur and edamame anchor the whole deal; the grapes, walnuts, caramelized onions, honey, and blue cheese are the crowning glory that makes it all come together. The fresh handful of spinach at the end keeps things feeling fresh and green. I like to feel fresh and green.

Don’t eat almonds and Diet Coke for lunch.

A sweet, nutty, powerhouse salad is calling.

Honey Walnut Salad

Honey Walnut Power Salad

Author: Pinch of Yum

Prep time: 15 mins

Cook time: 15 mins

Total time: 30 mins

Serves: 6

  • 2 tablespoons butter
  • 1/2 large yellow onion, thinly sliced
  • 2 cups seedless red grapes, washed and cut in half
  • 2 cups edamame (I did a quick steam-in-the-bag variety)
  • 1 cup uncooked bulgur or other grain
  • 3/4 cup walnuts
  • 1/4 cup honey
  • 1/4 cup water
  • fresh baby spinach
  • crumbled blue cheese
  • salt to taste
  1. Melt the butter in a medium saucepan over low heat. Add onions and saute on low for about 30 minutes, stirring occasionally, until onions are soft, golden brown, and almost sweet tasting.
  2. While onions are still cooking, pour bulgur and 2 cups water into a saucepan; bring to a boil and cook for 15 minutes, until most of the moisture has absorbed and the grains are soft enough to eat. Let cool for 15 minutes.
  3. When onions are done, stir into the bulgur so the butter is absorbed by the grains. Season with salt.
  4. Combine grapes and edamame in a large mixing bowl. Add cooled bulgur and walnuts. Whisk water and honey; pour over mixture and stir well. Add fresh baby spinach and crumbled blue cheese just before serving.

Makes about 8 cups, so each serving is 1 heaping cup.

I am going to be taking some time off from ye ole Pinch of Yum next week. Don’t worry – everything’s fine. I just need a few days to do things like put my feet up and eat cookies.

Seriously.

Have a great week you crazy food lovers!

Recipe – Mixed leaf Goji Grape Salad

by polly on April 27, 2012

I eat salad everyday. It’s fresh, clean, alkalising and nourishing. The most common complaint that I hear from people is getting bored with the combinations. As in, most people get stuck eating the same salad over and over again. Would you beleive me if I said that pre 2005 I never really ate salad? It’s true! It just never featured in my family’s mealtimes. It was always meat, potato and veg. Salad? That’s for rabbits isn’t it? My dad still has a hard time eating it as he is a meat and potatoes kind of man but every now and then I am able to coerce him into eating a mouthful of two with dinner.

I always buy organic because my food tastes much better without pesticides and herbicides. This mixed leaf concoction was what arrived from my organic box scheme provider Riverford.

Mixed Leaf Goji Grape Salad

  • 2 handfuls mixed leaf salad
  • 8 grapes sliced into thin strips
  • 1/4 red pepper, diced
  • Handful goji berries
  • 1 tomato, diced
  • 1 spring onion

Dressing

  • 2 tablespoons organic cold-pressed flax oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon raw honey
  • 1 clove garlic

Place all salad ingredients in a bowl. Whizz the dressing ingredients together in a mini-prep, pour over and serve.

"Food as Medicine".In the aftermath of Pink Slime!Fresh Harvested ...

Hippocretes , the Greek Father of medicine said: "Let food be your medicine and medicine be your food"!

I have a neighbor who just came out of hospital and is now recovering after a Brain Surgery .The doctor diagnosed  a possible anuarism !

This triggered a race to find the best FOOD  remedies  that might circumvent unhappy unhealthy endings and promote  a food regimen for a better health through food therapy .Here are the food he found out are good to eat for PREVENTION! I borrowed his findings and did some research and personal experimentation on the suggestred foods.

This narration is for information only.No diagnosis or prognossis is intended. You need to check out with your doctor before you attempt to eat or try this FOOD list. Some people have food allergies and need to practice precaution and consult their health practitioner apriori:

 1. Water. Dehydration raises stress hormone levels, causing serious brain damage. Drink at least ten glasses of water a day.The question is which water to drink?Personally I drink SPRING WATER with a PH of 8.5.

Here in Florida, it is a MUST to hydrate and drink plenty of water to replenish the loss of elecrolytes. So mineral and spring water is the answer.

2. Deep Ocean Fish. DHA, an omega-3 fatty acid found in fish, is the main component of brain synapses. A lack of omega-3 has been shown to diminish intellectual performance and is linked with dementia. If you don't eat fish, omega-3 is also found in walnuts, pumpkin seeds, and flax seeds. In addition, you can take it as a supplement; 1000 mg a day is what we recommend. (For a list of the best fish to eat, click here.)

3. Farm Fresh-Antioxidant Rich -Organic Fruits and Vegetables. The best of these, according to the U.S. Department of Agriculture, are blueberries, blackberries, cranberries, strawberries, spinach, raspberries, brussels sprouts,
plums, broccoli, beets, avocados, oranges, red grapes, red bell peppers, cherries, and kiwis. Five servings a day of fruits and vegetables is recommended.

Personally, I prefer to eat BLUEBERRIES most because:

4. Organic /Heirloom -Vine Ripe TOMATOES. These are a major source of the strong antioxidant lycopene. Lycopene reduces the risk of cancer by 40% - notably prostate, lung, and stomach cancers - and increases cancer survival. Tomato eaters function better mentally in old age and suffer half as much heart disease. Concentrated tomato sauces (found on pizza and in pasta sauces) have five times more lycopene than fresh tomatoes and canned tomatoes have three times more than fresh.

5.Extra Virgin First Cold Press Robust  OLIVE OIL. It is a major part of a Mediterranean diet, shown to help reduce death from heart disease and cancer. Heart attack survivors on a Mediterranean diet had half the death rates of those on an ordinary low-fat diet, recent research shows. A famous researcher, Ancel Keys, once declared olive oil the main dietary reason for remarkably low mortality rates among Mediterranean populations. Olive oil, unlike other vegetable oils, is high in antioxidant activity.

6. Organic Sprouted GARLIC. This herb is packed with nutrients known to help fend off cancer, heart disease, aging, and other health problems. Garlic has prolonged cancer survival time and extended animal lifespans by about 5%, which in humans might add about four years, German researchers have found. A tip from researchers at Penn State: let crushed garlic "rest" about ten minutes before cooking it, to preserve its disease-fighting agents. Garlic is the featured herb in this month's "Herbal Corner" section below.

7. Calaloo -SPINACH. This super health-promoter is second among vegetables only to garlic in antioxidant capacity. It is also rich in folic acid, which helps fight cancer, heart disease, and mental disorders. In animals, it protects aging brains from degeneration, according to studies performed at Tufts University. New University of Kentucky research shows folic acid may help prevent Alzheimer's Disease. Both raw and steamed spinach contain high antioxidant and other essential nutrient content.

The best SPINACH to eat in Florida is the Carribean :CALALO".

8-Wild harvested Mushrooms.Mitake and Shitake are my favorites. Here are the benefits of mushrooms:

9-Home Made Probiotic yogurt : Rich in acidophelis and bifidus .Time teste through history. My favorite is the home made GREEK yogurt.

10. Herbal / Green and ordinary black tea :It packs the same amounts of antioxidants and have equal benefits, experts say.Ginseng- added to your favorite herbal blends is a good choice. Harvard researchers recently found that drinking one cup of black tea a day cut heart-disease risk in half. Be sure to make ice tea from loose tea or tea bags; instant tea and bottled teas contain minimal antioxidants, tests at Tufts University show.

The Best Ways to Store Fresh Fruits, Vegetables, Meats and More ...

Sick of foods going bad in your fridge before you even have the chance to eat them? Save money (and enjoy your groceries! bystoring your foods correctly can keep them fresher longer. Here are some tips for storing different types of food to maximize their shelf life.

serving sizes.jpg

  • Meats and Fish:
    • Store meats and fish on the bottom shelf of your fridge, separate from other foods to avoid any juices that could leak out from contaminating other foods like fresh produce.
    • Raw meats and poultry: Keep them in their original packaging, but also wrap it up in heavy plastic wrap or aluminum foil before storing it in the fridge to keep it fresh and prevent leaks.
    • Fish: Should be used within a couple days of purchase, but to store it in the fridge until then, remove it from the lightweight supermarket packaging and wrap airtight in heavy plastic wrap or in an airtight plastic freezer bag.
  • Fresh Fruits:
    • Fresh fruits with delicate skins (like berries and grapes): Don't wash them before storing them in the fridge, as this will cause them to go bad quicker. Instead, store them in the fridge in their original package and wash just before use.
    • Apples, oranges and grapefruit: Store them in the crisper drawer of the fridge where it is cool and dark and they'll last quite a while..
    • Tropical fruits (like mango and pineapple), pears, peaches: Leave them out at room temperature until they begin to ripen. When the texture becomes slightly soft to the touch (gives slightly when you press on the fruit), they should either be used right away or put in the fridge at that time.
  • Fresh Veggies:
    • Asparagus: Wrap a slightly damp paper towel around stems before storing in the fridge in a plastic zip-top bag.
    • Carrots, Bell Peppers, Broccoli, Celery: Store in plastic zip-top bags in the crisper drawer and don't wash them until right before you use them.
    • Mushrooms: Keep in their original packaging and store in the fridge, and again, don't wash them until right before cooking or eating.
    • Pre-bagged Veggies (including salads): Keep in their original bags in the fridge, and even after you open them, keep the rest in the original bag (these bags are specifically designed to help keep it fresh longer)--fold the top down and then double bag it in an airtight plastic bag.
    • Fresh Greens: If you are buying lettuce or other fresh greens and washing and chopping it yourself, you can wash and chop them before storing them in the fridge. Just make sure that after you wash them you dry them thoroughly with towels or in a salad spinner. Then you can store them in an airtight container with a dry paper towel to absorb any remaining moisture in order to keep the greens crisp.
  • Fresh Herbs: To keep fresh herbs fresh in the fridge, first snip off the bottom of the stems with kitchen shears. Then, rinse quickly and dry the leaves completely with paper towels. Next, fill a small glass or jar halfway full with water and place the cut side of the stems into the water as you would do when putting flowers in a vase. Finally, place a plastic bag over the top of the leaves and the glass and store in the fridge. Be sure to change the water every few days. You can except your fresh herbs to last two weeks or more if you take the time to store them this way.
Keep This Produce OUT of The Fridge:
  • Tomatoes, bananas, limes, and lemon: They'll fare best if you store them on the counter top at room temperature (think fruit bowl).
  • Fresh garlic and onions: Should also be stored at room temperature in an area of your kitchen that has plenty of ventilation.
  • Potatoes: Store them in a cool, dry, dark place.
  • Melons: They'll have the best flavor and texture when allowed to ripen at room temperature on the counter.
  • More Tips: To make pre-prep and storage even easier, check out Tupperware's Chop 'n Prep. I also recommend storing foods in clear plastic or glass containers or bags whenever possible and marking the with the date the day you first put them in the fridge so you can find things and determine their freshness quickly. Last, but not least, remember to pull older items to the front of the fridge whenever you put newer items in so that you will use the older items first before they go bad.

As you can see, taking a little time to store fresh foods properly will keep you enjoying them longer!
