Eat The Blog: Strawberry and Sparkling Grape Sorbet

I still had a couple bottles of non-alcoholic white grape juice left from New Year's Eve, and this made good use of one bottle.

You Will Need:

1 quart strawberries, well-mashed
1/2 cup granulated sugar
1 cup sparkling non-alcoholic grape juice

Mash the strawberries and force them through a sieve to remove seeds. This is a pain in the behind, but worth it. Whisk in the sugar, then whisk in the sparkling juice. Keep whisking until the sugar dissolves (it goes pretty quickly with the carbonation). Place in a freezer tray and freeze 30 minutes. Scrape with a fork and mash. Return to fridge and repeat every 30 minutes until form. Scrape into a container and freeze until firm before serving. Makes about 1 1/2 pints.

I get fresh organic produce delivered to my home. It is all locally grown and fresh. I have found new vegetables that I normally do not eat. It is just a treat and a healthy treat at that to get it delivered.

I like to keep bowls out on my tray on the kitchen counter of fresh fruit and veggies. This helps me  throughout the day, and I will be reminded to grab some fruit, or veggies for my snack.

I try to display them in a pleasing way to make them more appealing, and decorative. Trust me this is an easy thing to do , or I would not be doing it!

 I like to have this out when I have overnight guest. This allows them to feel like they can always grab a snack.

Almonds and a Diet Coke. That was my sad lunch today.

As someone who feels that lunch is one of the highlights of the day (sandwiched between chocolate snacks and bedtime), having a bad lunch is more than just a little depressing.

To all you out there who can just “forget” to eat lunch, I can’t sympathize. To forget to eat lunch would be like forgetting about that big pile of miscellaneous garage sale stuff sitting in our living room. AS IF.

Honey Walnut Salad

One of the most glamorous things about a teacher’s job is eating in a teacher’s lounge. Imagine a rainbow of educational goodies on every wall, the sweet music of lunchroom chaos every time the door opens, and the overabundance of smallish plastic sporks, which, by the way, are really good at making you look like you don’t know how to eat.

This is why lunch – the actual lunch – better be seriously good.

When I saw Sara’s yummy salad a few weeks ago, I knew it was the ultimate epitome of lunch. So I made it, and made it again, and made it yet again using a tiny bit more grains for my big lunch appetite.  I love it. Love love love.

It’s portable, it’s healthy, it’s pretty, and it’s loaded with texture and flavor. The bulgur and edamame anchor the whole deal; the grapes, walnuts, caramelized onions, honey, and blue cheese are the crowning glory that makes it all come together. The fresh handful of spinach at the end keeps things feeling fresh and green. I like to feel fresh and green.

Don’t eat almonds and Diet Coke for lunch.

A sweet, nutty, powerhouse salad is calling.

Prep time: 15 mins

Cook time: 15 mins

Total time: 30 mins

Serves: 6

  • 2 tablespoons butter
  • 1/2 large yellow onion, thinly sliced
  • 2 cups seedless red grapes, washed and cut in half
  • 2 cups edamame (I did a quick steam-in-the-bag variety)
  • 1 cup uncooked bulgur or other grain
  • 3/4 cup walnuts
  • 1/4 cup honey
  • 1/4 cup water
  • fresh baby spinach
  • crumbled blue cheese
  • salt to taste
  1. Melt the butter in a medium saucepan over low heat. Add onions and saute on low for about 30 minutes, stirring occasionally, until onions are soft, golden brown, and almost sweet tasting.
  2. While onions are still cooking, pour bulgur and 2 cups water into a saucepan; bring to a boil and cook for 15 minutes, until most of the moisture has absorbed and the grains are soft enough to eat. Let cool for 15 minutes.
  3. When onions are done, stir into the bulgur so the butter is absorbed by the grains. Season with salt.
  4. Combine grapes and edamame in a large mixing bowl. Add cooled bulgur and walnuts. Whisk water and honey; pour over mixture and stir well. Add fresh baby spinach and crumbled blue cheese just before serving.

Makes about 8 cups, so each serving is 1 heaping cup.

Recipe – Mixed leaf Goji Grape Salad

I eat salad everyday. It’s fresh, clean, alkalising and nourishing. The most common complaint that I hear from people is getting bored with the combinations. As in, most people get stuck eating the same salad over and over again. Would you beleive me if I said that pre 2005 I never really ate salad? It’s true! It just never featured in my family’s mealtimes. It was always meat, potato and veg. Salad? That’s for rabbits isn’t it? My dad still has a hard time eating it as he is a meat and potatoes kind of man but every now and then I am able to coerce him into eating a mouthful of two with dinner.

I always buy organic because my food tastes much better without pesticides and herbicides. This mixed leaf concoction was what arrived from my organic box scheme provider Riverford.

Mixed Leaf Goji Grape Salad

  • 2 handfuls mixed leaf salad
  • 8 grapes sliced into thin strips
  • 1/4 red pepper, diced
  • Handful goji berries
  • 1 tomato, diced
  • 1 spring onion

Dressing

  • 2 tablespoons organic cold-pressed flax oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon raw honey
  • 1 clove garlic

Place all salad ingredients in a bowl. Whizz the dressing ingredients together in a mini-prep, pour over and serve.

Finally, place a plastic bag over the top of the leaves and the glass and store in the fridge. Be sure to change the water every few days. I got into the raw scene a few months ago and started to eat raw sometimes 50%, sometimes up to 80%. It was great, I felt great. Healthier me, better skin, stronger hair, more energy, better mood. Of course in the beginning I had some detox symptoms but it was ok. Then I got lazy, stopped making great raw leafy and veggie meals, cooking and had rather small portions raw food, fruit in the morning but not enough so I would snack on too many nuts and such things, eventually grab more and more sweets like cookies or chocolates.. you know some of the newbie mistakes. A few skin issues like dandruff and low energy pointed to the fact that I had some nutrient deficiencies and fat imbalances. My whole life my body didn’t crave for great breakfasts. I would eat two apples or a bowl of grapes or something in the morning and then the first bigger meal 3-4 hours after waking up. Light meals in the morning gave me energy! After a good sleep I didn’t need 1000 kcal as I would feel like a refilled battery anyway. The problem was I got pretty hungry every evening. I thought: Well maybe it’s time to go a level higher and try out 80/10/10. 

 

First days I had more bananas than usually. Before I wouldn’t eat more than 5 fruits a day, now I tried to have more and 3-5 bananas and felt amazing. My dandruff got better. During the day I would graze on more fruit and in the evening eat salads, sometimes some pasta with raw marinara, which never caused me any problems. I didn’t eat the required calorie intake though, cause I wasn’t used to stuff my small belly like that.. but I saw that a smaller amount of fruit and salads only would leave me with deficiencies (cronometer showed me.. never enough iron, vit e, amino acids etc.) so the next days I tried to eat more bananas than my appetite would want to have. 8-10.. I was doing it for having at least 2000 kcal every day and cover up more nutrients. This is when I felt worse and worse with every day. I didn’t have the promised energy like I did experience in the first two or three days and thought I had to increase to 2500 but it was impossible. During 2 weeks!!! my intestines got clogged by forcing myself to eat more bananas and dates (even if blended..), my perfect bowel movements stopped, I got a belly like pregnant with twins, which is gross as I am actually quite thin. :( Now I tried to get the most part of the calories in the first half of the day which was impossible. Of course because of the constipation, I got breakouts. I couldn’t sleep well. My hair got weaker, my wrinkles suddenly became deeper, my cellulite as well (?) All day long I felt all those bananas in my stomach.. I had nightmares of becoming as wrinkly as Doug G although I always looked younger than my actual age and was proud of that. I couldn’t think clearly, felt confused, out of balance. Struggling whether I should push it through or not. I stopped. I incorporated more sprouts, avocado, coconut oil, cooked lentils and millet, fresh herbs, wheat grass, spices like turmeric and greens into my diet again. Just waaaay more balanced. I’m not counting calories anymore. Trying not to snack on whole packs of nuts anymore, though I would have surely 20% of fat coming from calories every day. Got back to 3-5 bananas, don’t eat in the morning unless I feel like it. Listening to when my body is asking for more instead of stuffing. Well.. my hair got stronger again, my wrinkles are pretty gone, bowel movements get better (although I still think I have bananas from last week in there :O) and I hope this will be the way to go for me to live my life to the fullest.  ;) 

 

Lesson? Never follow something that doesn’t work for you. That has a name, that has an ideology. Take from it what you can learn and what will heal you, add what you need, avoid what does you bad. That will work for you! We all have different needs for everything. 

 

DR and Freelea aren’t bad people and it’s cool that 80/10/10 100% works for them, it’s just too bad they don’t see others as individuals with all those different needs, lifestyles, sorrows, situations, pasts. I hope one day they will be ready to look behind their horizons.

Immune Boosting Foods

It’s no secret that a healthy diet results in a stronger immune system; but what vitamins and food do we specifically need to defend our bodies against colds and flus this winter?

Vitamin C

Research shows that adequate intake of vitamin C can build a healthy immune system and defend your body against disease. It probably wont stop you from catching a cold but you’ll be more likely to recover from it quicker and experience milder symptoms.

It wont make much difference if you try to eat more vitamin C once you’re already sick but if you are eating plenty of this vitamin everyday you can expect to fight off your infection faster.

Vitamin C helps fight infection by:

  • stimulating our immune system to produce interferon (a natural anti-viral),
  • activating our white blood cells, and
  • by helping in the production of antibodies.

Vitamin C is one of the most bountiful vitamins found in fruit and vegetables an it’s really easy to meet your body’s requirements. Vitamin C is best eaten through whole foods and the fresher the food is the higher the vitamin C content. The longer the fruit and vegetables are in storage or at room temperature the less vitamin C they contain. The RDI (recommended dietary intake) for adults is 45mg of vitamin C per day. 1 medium size orange has approximately 69mg of vitamin C so 1 orange a day will definitely help keep the doctor away!

Other meal and snack ideas to ensure sufficient vitamin C intake are:

  • Bruschetta – chop up 2-3 fresh tomatoes, 1/2 spanish onion and a handful of fresh basil leaves. Combine with a dash of olive oil and balsamic vinegar and serve on top of toasted turkish bread or sourdough. Serves 2. Contains 50mg vitamin C per serve.
  • Fruit salad – chop up 1 banana, 1 apple, 1 cup strawberries. Add 1 cup grapes and 1 cup blueberries. Toss in 1/4 cup freshly squeezed orange juice. Serves 2. Contains 75mg vitamin C per serve
  • Steamed vegetables – 1 cup broccoli florets, 4 Brussels sprouts, 1 cup peas. Serves 2. Contains 90mg vitamin C per serve

Other sources of vitamin C to eat regularly:

Oranges, mandarins, lemons, limes, rock-melon, honeydew melon, cherries, kiwi fruit, mangoes, papaya, strawberries, tangelo, tomatoes, water melon, cabbage, broccoli, brussels sprouts, bean sprouts, cauliflower, kale, mustard greens, red and green capsicums, peas and potatoes.

Beta carotene

Beta carotene is known as pro-vitamin A. This means that when you eat beta carotene it gets converted into vitamin A by your liver.

Research shows that adequate intake of vitamin A can actually help prevent colds and flus from even taking hold. This is because vitamin A protects our mucous membranes.

Sound a bit technical? Mucous membranes line our mouth, nose, throat and breathing passages and thus strong mucous membrane are more resistant to virus and bacteria that can cause infection there. It is also involved in the production of tears, saliva and sweat which also contain antiviral and antibacterial properties.

Beta carotene is generally found in yellow or orange vegetables. It’s so abundant in these vegetables that you’ll have no problems in meeting your body’s vitamin A requirements. The RDI for adults is 900ug of vitamin A per day for men and 700ug of vitmain A per day for women. 1 large carrot has approximately 1200ug so 1 carrot a day will also help keep the doctor away!

Other meal and snack ideas to ensure sufficient vitamin A are:

  • Pumpkin soup – saute 1 chopped onion and 1 crush garlic clove in a little dash of olive oil. Add approximately 600g chopped, skinned pumpkin and cover with 2 cups of water and 2 cups of salt-reduced chicken stock. Simmer until pumpkin is soft. Blend until smooth. Serves 2. Contains 1300ug of vitamin A per serve. Also try my Hearty Pumpkin Soup.
  • Snack platter – serve chopped carrots, celery, capsicum, zucchini and broccoli florets on a platter with hummus, natural yoghurt and other low fat dips. Serves 4. Contains 400ug vitamin A per serve.
  • Sweet potato chips – cut up 1 large sweet potato into chunky chip sized batons. Steam or microwave them until just soft. Spray them with olive oil and toss in sea salt and spanish paprika. Cook on a BBQ or char grill until crispy and serve with a fresh garden salad and BBQ’d meat. Serves 4. Contains 600ug vitamin A per serve.

Other sources of Beta-carotene to regularly eat:

Carrots, sweet potato, spinach, grapefruit, brussels sprouts and broccoli.

Lycopene

A final defender against colds and flus is lycopene. This a phytochemical found fruits and vegetables with a number of health benefits including the building of a healthy immune system.

Other sources of lycopene to regularly eat:

Tomatoes, cherries, red capsicums, watermelon, kale and strawberries.

I’m so sorry I am a week late on sharing this with you guys but I have literally been either studying for finals {or daydreaming about the wedding}.

Today I made this dish directly from The Eat Clean Diet Vegetarian Book which you can find here. I got mine in the mail and LOVE it. I cannot believe how many recipes there are and how awesomely they are labeled.

You can omit the fish to make this vegetarian but I like fish so I kept it in. I did make a few other mods which I have noted in the recipe due to what I had in the house because running our to the grocery store was not happening today.

Tri-Color Farfalle with Tuna, Spinach and Artichoke Hearts

Farfalle, or bowtie, pasta is a kid-friendly shape that has always been a major hit in my house. You just might be able to get your kids to eat their spinach and tuna when they are mixed with these guys.

  • Prep: 15 minutes
  • Cook: 12 minutes
  • Yield: 8 x 2-cup servings

Ingredients:

  • 12 oz (340 g) tri-color farfalle pasta (such as spinach and tomato), or similar sized pasta such as penne or shells (regular boring colored)
  • 15 oz (425 g) no-salt-added solid white albacore in water, drained (tilapia sauteed) 
  • 8 cups (1.92 L) fresh baby spinach (subbed broccoli)
  • 1 x 13- to 140 oz (385 to 414 ml) can quartered artichoke hearts in water, drained (didn’t have)
  • 1½ cups (360 ml) cherry or grape tomatoes, halved
  • ½ cup (120 ml) chopped pepperoncini
  • ½ cup (120 ml) chopped fresh basil (used dried)
  • ¼ cup (120 ml) chopped fresh dill (omitted) 
  • 1 lemon, zested and juiced
  • 1 Tbsp (15 ml) extra virgin olive oil
  • ½ tsp (2.5 ml) each sea salt and freshly ground black pepper

Bring a large pot of water to boil, add the pasta and stir. Cook according to package directions until al dente. Drain, reserving ¼ cup (60 ml) of the cooking water. Transfer pasta to a large bowl and add remaining ingredients. Add reserved cooking water, and toss to combine. Can be served warm, at room temperature or cold.

Chill Out

This dish will keep in the refrigerator for up to two days.

This dish travels well! Why not double the recipe and have planned leftovers?

Unfortunately since I don’t eat wheat I had to eat around the noodles but the Fatkid liked it :) he loves pasta salad and eats it cold. The pepperoncinis, basil and lemon have it a really nice light taste.

Thursday Two Question #84 - Fruits & Health | Self Sagacity

I am growing more appreciative of fruits everyday, especially mango. I guess because it is the kindess to my stomach, and is also my favorite in terms of taste.
I love all kinds of fresh fruits, but there are many that I prefer over others. In general though, if its convenient and meets my taste bud, I will probably consume it quite often.
My favorite fruits are mango, red grapes with thin skin, and nectarines. I have a few fruit trees, and one of them being a nectairne tree so it's really great to eat the fresh fruit from our own tree. The fruit that is quite popular in our household is probably bananas. It is convenient and clean to eat, and it is also a neccessity because I need the potassium.
